    Coconut, Mango and Lime No Bake Cookies

    I first tried this recipe about 9 months ago before we started travelling and discovered that it was a huge hit with everybody who tried it. It was our particular favourite when we went on day trips exploring as a tasty but healthy treat, and we’re confident everybody who tries it will love it!

    INGREDIENTS:

    1/2 cup freeze dried mangoes
    1 cup shredded unsweetened coconut
    Pinch salt
    1 tsp vanilla
    1 tsp lime juice (fresh is best if you can)
    1/2 tablespoon vegetable oil
    2 tablespoons honey

    METHOD:

    1. In the bowl of a food processor, blend the coconut until it is a fine powder.
    2. Add the dried mangoes. Don’t rehydrate them – just add them dry – and process until everything is powdered.
    3. Add all other ingredients and process until it forms a “dough”. This will take about a minute.
    4. Roll into balls.
    5. Refrigerate until firm.

    Depending on the size, it will make about 10 cookies.

    MODIFICATIONS:

    I have also tried this with dried pineapple instead of mango – absolutely delicious!
